Lemon sorbet in the Ninja Creami ice cream maker is a wonderful frozen dessert. It is healthier than traditional ice cream but just as tasty! This lemon sorbet recipe is made with water, freshly squeezed lemon juice, and brown sugar for a touch of sweetness.

It is the perfect blend of sweetness and tanginess. Because this recipe uses fresh lemon juice it has a bright lemon flavor that isn't artificial tasting or overpowering. Also try my Ninja Creami chocolate ice cream and Ninja Creami banana ice cream. So easy and delicious!

Recipe ingredients

Warm water. Use warm water so the sugar will melt faster.

Lemon juice. Fresh lemon juice will have a brighter citrus flavor than bottled. Look for large lemons with thin, smooth skin because they will be juicer, and avoid lemons with rough skin because they usually have more pulp than juice in them.

Brown sugar. Gives a rich but light sweetness to this lemon sorbet.

How to make Ninja Creami lemon sorbet

Prepare your ingredients. For this recipe you will need only lemon juice, warm water and brown or white sugar. I like to use brown sugar because it gives pretty color to the sorbet and extra flavor.

Add warm water, juice and sugar in to the blender and blend for 10 seconds. Optionally you can just stir it very well instead of blending. Pour the mixture in to prepared Ninja Creami plastic pint cup. Freeze for 24 hours on a leveled surface on the freezer.

Next day, place the pint cup in to the Ninja Creami, lock the lid and push on Sorbet button. For creamy and not crumbly sorbet you will need to re-spin once or twice. Enjoy!

What is sorbet

Sorbet is simply a frozen dessert made of water, sugar, and the fruit of your choice. Because it doesn't contain any dairy, it is a great dessert to serve if you or your family are dairy-free, instead of traditional ice cream.

You can blend fresh fruit to make a fruity or berry sorbet or keep it simple like in this lemon sorbet recipe and use only fresh lemon juice for an intense lemon flavor.

Substitutions

Sugar. Use regular white sugar or coconut sugar instead.

Lemon juice. Use 100% pure bottled lemon juice instead of fresh if you like.

Variations

Lemon zest. You can add 1 teaspoon of grated lemon zest to increase the lemon flavor.

Fruit juices. Use a combination of lemon and lime juice or simply orange juice to create other refreshing flavors of homemade sorbet.

Lemon blueberry sorbet. Add a handful of blended blueberries to the lemon mixture before freezing to give this recipe a fruity flavor and lovely color.

Strawberry lemon sorbet. Use blended fresh or frozen strawberries to make this sorbet taste like strawberry lemonade!

Make it in a blender. If you don't have a Ninja Creami Ice Cream machine you can make lemon sorbet using any high-speed blender. Add ice cubes, lemon juice, and sugar to a blender then blend until the mixture is smooth and frosty.

Frequently asked questions

What is the difference between sherbet and sorbet?

Both are frozen fruit desserts, but the biggest difference between sherbet and sorbet is that sherbet is made with dairy and sorbet isn't.

Is sorbet healthier than ice cream?

Yes, sorbet is a healthier alternative to ice cream because it is made without milk, eggs, and cream. It also contains much less sugar than traditional ice cream recipes.

What is lemon sorbet made of?

Lemon sorbet is made of water, fresh lemon juice, and sugar. You can also add grated lemon zest if you want to increase the lemon flavor.

Why add egg whites to sorbet?

Egg whites are sometimes added to sorbet recipes to give them a thicker, creamier texture similar to ice cream.

Why is my homemade sorbet icy?

If your homemade sorbet is icy you probably didn't add enough sweetener. Sugar or some type of sweetener helps the water in the sorbet from forming large ice crystals which can cause your sorbet to be icy instead of smooth.

Why is my sorbet crumbly?

To avoid a crumbly sorbet try adjusting your freezer settings, leaving your sorbet on the counter for a few minutes before scooping and serving, or running it through the RE-SPIN setting on your Ninja Creami.

Storage instructions

You can double the recipe and pour the mixture in to two pint size containers. Use one in 24 hours and keep another one for later use. If you have any Ninja Creami lemon sorbet leftovers, just smooth the sorbet on top as much as possible, place the lid on the jar and place it in the freezer.

Before enjoying it again, just let sit on the counter for 3-5 minutes to thaw for a bit. You can re-spin it if you feel like it needs it. I always re-spin for a better, creamier texture! Sorbet in general is not very creamy but after couple spins the texture is great!

FAQs

Why is my Ninja creami sorbet crumbly? ›

NOTE: If your freezer is set to a very cold temperature, the sorbet may look crumbly. If this occurs, select RE-SPIN to process the mixture a little more if not adding mix-ins.

Can you refreeze Ninja creami sorbet? ›

Flatten the top of your frozen treat with a spoon or spatula before refreezing. If the treat is soft after re-freezing, just scoop and enjoy it. If it is hard, process it again on the program you used to make it.

Can I put frozen fruit in my Ninja Creami? ›

Can I use frozen fruit in the Ninja Creami? Yes, you can. But, frozen fruit either needs to be thawed out before using, blended with the other ingredients, or have a liquid, like dairy added to the pint to fill in all of the gaps. You cannot only use frozen fruit as it could damage the machine.

Why is my Ninja Creami chalky? ›

After your first spin, sometimes you open it and find that your ice cream is crumbly or powdery. Don't stop now. Just add a tablespoon or two of liquid and spin on respin. If your ice cream has been in the freezer a long time or your freezer is extra cold, you may even have to repeat the respin several times.

How to make Ninja creami less crumbly? ›

If your Ninja Creami ice cream is crumbly, add a splash of milk, cream, or yogurt and use the re-spin button. Using a dairy-free milk can increase the likelihood of a crumbly consistency, so be sure you're using a full-fat liquid and run the re-spin a few times if needed.

Do I really have to wait 24 hours for Ninja Creami? ›

Ninja recommends freezing Creami bases for 24 hours, but we've had success with 8 to 12 hour freezing times, too. In our experience, freezing bases for 24 hours or longer usually meant they'd be very chalky on the first run through the Creami and require multiple respins.

Is Ninja Creami discontinued? ›

The Ninja Creami Breeze is discontinued.

What if Ninja Creami is too powdery? ›

If after your first spin your ice cream is powdery or just not quite creamy enough, run a Re-Spin. If it's very powdery (like most protein ice creams), add that tablespoon of extra liquid.

Is creami sorbet the same as gelato? ›

In comparing sorbet and gelato, the latter has more calories and fat because it contains milk. Sorbet is just fruit juice and sugar (no dairy) and has fewer calories, so many consider it the healthier option.

Can I put soda in Ninja Creami? ›

Pour mixture into an empty CREAMi™ Pint. Add cola and stir with a spoon to combine and eliminate the carbonation. Place storage lid on pint and freeze for 24 hours.

How do I make my Ninja creami less icy? ›

I recently found success with adding food grade vegetable glycerin to some of my Ninja Creami pints and found that the glycerin has helped keep the ice cream soft enough to scoop after refreezing the leftovers. The full fat/sugar, and protein recipes have worked great!

Can you put ice cubes in Ninja Creami? ›

It's also important to note that this is not a blender. You can't throw some ice cubes or frozen fruit into the machine to make a smoothie. Everything you make with the Ninja Creami Deluxe must be prefrozen solid in the provided pint container.

Why does my Ninja Creami ice cream leave a film in my mouth? ›

Why does my Ninja Creami ice cream taste greasy? If you're finding that your Ninja Creami Ice Cream has a greasy taste, it's likely due to a high butterfat content in your ice cream mix. This can leave an unpleasantly cloying film in your mouth. The solution is to try using less cream and more milk in your recipe.

What to do with leftover Ninja Creami? ›

The best way to store Ninja Creami leftovers is to smooth out the mixture so it's flat and stick it back in the freezer. When you're ready to enjoy it again, run it on the same setting as before and follow the later instructions to get the correct consistency.

Can I use a blender instead of a Ninja Creami? ›

Sure you have to wait that long with an ice cream machine anyway, but if you want a smoothie bowl, "nice" cream, and even sorbet, those are things that you could immediately whip up in a blender if you have the right frozen ingredients.

Why is my ice cream so crumbly? ›

Crumbly Body:

High overrun: Overrun refers to the amount of air incorporated into the ice cream during the freezing process. High overrun, coupled with large air cells, can result in a crumbly texture. Low stabilizer or emulsifier: Stabilizers and emulsifiers play a vital role in maintaining the structure of ice cream.

Why is my sorbet crunchy? ›

One of the secret of great quality sorbet is that temperature fluctuations should be reduced as much as possible. The more the temperature fluctuates up and down, the larger the water crystals become inside the sorbet, making the it less creamy and with a crunchy feel.

How do you fix soft sorbet? ›

If your sorbet is too soft or melty after churning and freezing:
  1. Melt the base back down to liquid, add more fruit purée or acid to lower the ratio of sugar to liquid, then re-churn OR.
  2. Re-freeze your churning bowl and make sure it's properly cold—frozen for a full 24 hours minimum—before attempting to rechurn.
